Stag's Breath Fudge

Ingredients

500g granulated sugar
60g butter
60g glucose syrup
200ml evaporated milk
3 tablespoons water
2 tablespoons Stag's Breath

Method

Using a large, strong pan, put in sugar, milk and water and stir. Leave on a moderate heat until the sugar is all melted. Increase the heat, add butter and glucose. Boil until 114 C (soft ball). Remove from heat and stand for 5 minutes. Add Stag's Breath and beat hard with a wooden spoon until creamy and thickening. Pour immediately into greased tin. Cut in to squares when cooled.
