Madrilene Stag's Breath

Wonderful with Melba Toast

Ingredients
2 pints good chicken stock
3 carrots and 2 onions, roughly sliced
6 fresh tomatoes, chopped
bay leaf and crushed peppercorns
half cucumber, julienned
grated nutmeg
4 tbsps STAG'S BREATH LIQUEUR

Method
Combine all the ingredients except the Stag's Breath, cucumber and nutmeg, and bring to the boil, then simmer until vegetables are soft. Strain through nylon sieve or muslin. Reheat and add julienne of cucumber and grated nutmeg. Simmer for a few minutes. Add the Stag's Breath Liqueur and reheat, but do not boil. Serve with melba toast.
