Stag’s Breath Roast Turkey

Stag’s Breath Roast Turkey with Honey-Liqueur Gravy

 

Ingredients (Serves 6-8):

For the Turkey:

1 whole turkey (approx. 4-5kg)

200ml Stag’s Breath Liqueur

3 tbsp unsalted butter, softened

2 tbsp honey

1 tbsp Dijon mustard

1 tsp fresh thyme, finely chopped

Salt and pepper to taste

For the Gravy:

300ml turkey stock

100ml Stag’s Breath Liqueur

2 tbsp honey

2 tbsp plain flour

 

Instructions:

1. Prepare the Turkey:

Preheat the oven to 180°C (350°F).

Mix butter, honey, Dijon mustard, and thyme. Rub the mixture under the turkey skin and over the surface. Season with salt and pepper.

Pour 100ml of Stag’s Breath Liqueur into the cavity for added flavor.

2. Roast the Turkey:

Place the turkey on a roasting tray and roast according to its weight (usually 40 minutes per kg, plus an additional 20 minutes), basting every 30 minutes with pan juices.

Cover with foil if the skin browns too quickly.

3. Make the Gravy:

Once the turkey is cooked, remove it from the tray and let it rest.

Place the roasting tray on the stove, skim excess fat, and sprinkle flour over the drippings.

Cook for 1-2 minutes, then gradually add turkey stock, stirring constantly.

Pour in Stag’s Breath Liqueur and honey. Simmer for 5-7 minutes until the gravy thickens.

4. Serve:

Carve the turkey, drizzle with the honey-liqueur gravy, and serve with your favorite festive sides (e.g., roasted potatoes, stuffing, or cranberry sauce).
